Ingredients
Makes: 12-15 muffins
1⁄2 cup (100 g) unsalted butter, softened
2⁄3 cup (150 g) sugar (if you like your cupcakes very sweet, add a little more)
2 eggs
1 1/3 cups (200 g) self-rising flour
1/2 cup (120 mL) milk
Strawberry
If you don’t have self-rising flour and you have a recipe that calls for it, you can make your own by combining 1 cup all purpose flour with 1 tsp baking powder and 1/4 tsp salt.

Preparation: 20 min
Cook: 25-30 min
Ready in: 45-50 min
1. Preheat the oven to 330 F/165 C. line muffin cups with papers or silicone.
2. In a medium bowl, cream together the sugar and butter. Beat in the eggs.
3. Add gradually self-rising flour and milk. Mix until smooth.
4. Spoon 1 tbsp mixture into the prepared tin, add 1 large strawberry. Put the mixture on top. Filling cups 2/3 full. Bake in a preheated oven to 330 F/165 C for 25-30 minutes or until the capcakes are light golden. Using a toothpick inserted in the center to test for doneness.
5. Top with powdered sugar, mint leaves, strawberries.
