Ingredients
Makes: 12-15 cupcakes
100g butter, softened
1/2 cup (100 grams) caster sugar
2 eggs
1/2 tablespoon lemon zest (finely grated)
2 tablespoons fresh lemon juice
1 cup (150 grams) self-raising flour
Meringue:
2 egg whites
1/3 cup (65 g) caster sugar
1/2 tablespoon lemon zest (finely grated)
If you don’t have self-rising flour and you have a recipe that calls for it, you can make your own by combining 1 cup all purpose flour with 1 tsp baking powder and 1/4 tsp salt.
Directions
1. Preheat the oven to 330 F/165 C. line muffin cups with papers or silicone.
2. In a medium bowl, cream together the 1/2 cup (100 grams) caster sugar and butter. Beat in the eggs. Add lemon juice and 1/2 tablespoon zest. Add gradually self-raising flour. Mix until smooth. Filling cups 1/2 full.
3. How to make meringue. Place egg whites in a clean, dry bowl. Use an electric mixer to whisk until firm peaks form. Gradually add 1/3 cup (65 g) caster sugar, beating well between each addition. Continue beating for 2-3 minutes or until sugar completely dissolves. Add 1/2 tablespoon zest. Beat 1 minute. Spoon meringue on top of each cupcake.
Bake in a preheated oven to 330 F/165 C for 25-30 minutes or until the cupcakes are light golden. Using a toothpick inserted in the center to test for doneness.
Decorate with caster sugar and lemon zest (optional).
